Sure, but adding the infrastructure to handle the additional loads from the lifting foils would take the weight of the boat up considerably more than 250 kg. I don't think there's a way to engineer those kinds of loads on 6mm plywood. Maybe some well-designed grid made out of CF could be tabbed into the frames and hull panels, but I am not an engineer and would never play one on television.
